Now I have to confess that this recipe is my version of the wonderful dish we served at an event I was involved with, On what turned out to be an absolutely wonderful evening of comedy and curry with my amazing friend, Hardeep Singh Kohli

Now! by my own admission, I don’t think I quite nailed this dish, It tasted great, but lacked the Hardeep touch! I listened very intently to what Hardeep was telling me over the telephone during a rather in-depth conversation about balance of spicing etc a few days before the event, unbeknown to him, I had written a menu completely of HIS dishes ( this was my treat to him as way of a surprise! ) I tried as best as I could to do his classic dishes justice for the evenings celebration! the man has immense enthusiasm for all things foodie, and that enthusiasm rubbed off on all of us in the kitchen, we’re still coming down from it now!

So here it is! The recipe that I ” borrowed ” my interpretation, and I apologise to Hardeep wholeheartedly for any mistakes! Love to you Big man xx
