Marinated Mackerel, Pink Peppercorns, Lime and Ginger


Again this is a cracking starter that can be prepared in advance, saving stress and time



SHOPPING LIST


  1. 400g of fresh mackerel fillets

  2. The juice and zest of 4 limes

  3. 2 teaspoon of pink peppercorns

  4. 1 inch piece of fresh ginger, finely grated

  5. Good pinch of salt

  6. Good pinch of caster sugar


METHOD


  1. Using an extremely sharp knife, carefully slice the mackerel fillets at right angles towards the tail

  2. Place on plates and chill for 30 minutes

  3. Mix all the other ingredients together

  4. Now dip each piece of mackerel into the marinade and arrange neatly onto plates

  5. Spoon over the remaining marinade and serve immediately
