PORK TENDERLOIN AND MUSK'S PORK SAUSAGE WITH MARMITE, FETA CHEESE AND CALIFORNIA PRUNES



I know this recipe may sound rather weird, But, The Wonderful Musk's Marmite Sausage meat blended with the saltiness of the feta cheese and the sweetness from the California prunes works really well with the pork tenderloin, this recipe really is a super nice tasty supper dish, And isn't overly difficult to prepare


The recipe will serve 4 people




Shopping list


  1. 500g of Pork tenderloin (fillet)

  2. 4 Musk's Pork Sausages with Marmite ( Sausage skin removed )

  3. 125g of feta cheese ( Roughly crumbled )

  4. 125g of California prunes ( Roughly chopped )

  5. 6 sage leaves finely chopped

  6. Handful of fresh chopped parsley

  7. 4 rashers of Musk's Unsmoked Streaky Bacon

  8. 50g butter

  9. 1 medium size onion peeled and finely chopped

  10. 200ml of white wine

  11. 200ml of chicken stock

  12. 200ml of Crème fraiche




Method


1. Trim the pork of any sinew, and cut into 4 equal pieces

2. Batten out the each piece of the pork between cling wrap ( use a rolling pin if you don't have a meat mallet )

3. Mix together the Musk's Sausage with Marmite, feta cheese, sage, parsley and prunes

4. Spread the mixture evenly between the pieces of flattened out pork

5. Roll the pork up carefully and wrap in a piece of Musk's Unsmoked Streaky Bacon

6. Now melt the butter in a pan and fry the onion on a medium heat for 5 minutes

7. Now add the pork and colour on all sides, turning frequently, until golden

8. Now add in the wine and the stock, bring gently to the simmer and then add the Crème fraiche

9. Cover the pan with a lid or tin foil and cook for 10 minutes

10. Remove the pork from the sauce

11. Reduce the sauce by half, Taste and adjust the seasoning

12. Slice each pork piece into 3, and arrange in warm bowls, top with the sauce

13. Serve immediately with some steamed rice, or buttered greens
